Upcoming 2018 Food Trends
January is a great month for many reasons – it lets us reflect critically on the happenings of the previous year but it also allows us to look into to the next 11 months as a blank canvas… or platter. What would you like to see? What will you create?
First off – The Relish Catering team would like to wish you a happy new year and provide you with a short list of the hottest upcoming 2018 food trends!
Due to its many benefits, Golden Milk has become a buzz term within the health and lifestyle industry in the past year. In 2018, we expect Golden Milk to increase its reach from being a home-based drink into being served at coffee shops, corporate events and even wedding receptions.
Not only is this turmeric based drink pleasantly tasteful when paired with almond milk, a speck of cinnamon and honey but it’s also packed with incredible health advantages. Curcumin, a compound found in turmeric provides the orange-ish color and also supplies incredible antioxidant and anti-inflammatory effects to our bodies. Several case studies have shown that turmeric can even help alleviate symptoms of rheumatoid arthritis and help with digestive problems. If you haven’t had the chance to try golden milk, give it a shot this winter season as its antiviral effects also help build immunity and can be helpful during the cold and flu season.
Bonus points: Add crushed black pepper to your golden milk to increase the bioavailability of curcumin which helps increase absorption.
Plant Based Meats
Vegetarians, vegans and people looking for other dietary alternatives – this is your time to rejoice! In 2017, companies like Beyond Meat and Impossible Foods gained an incredible amount of traction and continued developing ways to process plant-based protein into food that looks, cooks and tastes just like meat. With recent culinary innovations, plant-based cuisine is one of the top 2018 food trends. Not only is this a powerhouse of good nutrition and good for our health, it’s also good for the environment.
This year, expect plant-based meats to pick up momentum and with that – a larger variety of options available at your grocery store and local restaurant menus.
Transparency & Farm to Table
The trend for local and organic foods has continuously been on the rise and it won’t come to a stop anytime this new year. The importance of transparency and knowing where our food comes from expands beyond simply being able to trace our food back to the friendly neighborhood farmer. It is also about supporting our local economy and being certain that the products we are consuming are fresh, full of flavor and micronutrient-rich due to the reduced amount of time between harvest and your table.
When it comes to mindful eating, it is a multifaceted approach driven by a variety of factors. These can range from eating slowly without distractions (savor that flavor!) to simply listening to your body and paying more attention to the appetite signs. One mindful 2018 food trend that we see on the rise is root-to-stem cooking.
According to a publication released by the Food and Agriculture Organization of the United Nations (FAO). “Roughly one-third of the food produced in the world for human consumption every year — approximately 1.3 billion tonnes — gets lost or wasted”. This is a lot of food! Even some of the parts we throw out are actually usable and add to this statistic.
In the past year, there have been more recipes integrating these lesser used parts to combat food waste and be more mindful of our bodies and the environment.
Floral Flavors (Wedding)
For those of you tying the knot this year, we’ve got you covered! This 2018 food trend will make your menu one to remember. This year, floral flavors will flourish and they will not only be part of the bouquet or centerpieces; they will also be incorporated into the food. When used properly, flowers taste delicious too! Be bold this year and try adding some floral flavors like lavender, elderflower and orange blossoms to your mains or cocktails.
Bonus points: Think about matching your dress or bouquet with the petals used on the mains and cocktails.
